* Exported from MasterCook * Stuffed Beef Roll Ups Recipe By : Unknown Cookbook Serving Size : 4 Preparation Time :0:00 Categories : Beef Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 sl Top round beef steak (1/4") -- - 10 to 12" long 2 tb Olive oil 6 oz Can tomato paste 1 ts Sugar 1 tb Flour Salt & pepper Vegetable & Spice Mixture: 1 Carrot 2 Celery ribs 1 ts Cinnamon 1 Onion 1 cl Garlic Salt & pepper Chop together the vegetable & spice mixture. Divide chopped vegetable & spice mixture into 4 equal portions. Place a portion on each slice of beef and roll up, tying together with eavy string. In skillet, brown roll-ups on both sides in olive oil. Remove and place in casserole dish, adding enough water to cover. Bring to boil, lower heat and simmer for 2 hours. Add tomato paste, sugar, flour, salt & pepper to taste, and simmer 1 hour longer or until meat is tender. Before serving, remove strings from roll-ups. Serve over rice pilaf or spaghetti.
