MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Southwestern Beef & Rice Skillet Categories: Beef, Vegetables, Chilies, Rice, Cheese Yield: 4 Servings 1 lb Ground round 1 md Onion; chopped 1 md Green pepper; chopped 1 lg Jalapeno; seeded, - fine chopped 1 1/2 c Uncooked instant rice 14 1/2 oz Can diced tomatoes with - green chilies 1 1/2 c Beef broth 1 ts Ground cumin 1/4 ts Salt 1/4 ts Pepper 1 c Shredded Mexican cheese - blend In a large skillet, cook beef, onion, green pepper, and jalapeno over medium heat until meat is no longer pink and vegetables are tender, 8 to 10 minutes, breaking beef into crumbles; drain. Add rice, tomatoes and chiles, broth, and seasonings. Bring to a boil, then reduce heat. Simmer, covered, until liquid is absorbed, about 5 minutes. Fluff with a fork.
