MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sriracha-Marinated Skirt Steak Categories: Beef, Chilies, Citrus, Herbs Yield: 6 Servings 1/2 c Oil 1/4 c Sriracha chile sauce 1 tb Lime juice 1 ts Lime zest; grated 1/2 ts Kosher salt 1/4 ts Ground cumin 1/4 ts Smoked paprika 2 lb Beef skirt steak In a small bowl, whisk the first 7 ingredients until blended. Pour into a shallow dish. Add beef; turn to coat. Cover and refrigerate at least 4 hours or overnight. Drain beef, discarding marinade. Grill, covered, over medium-high heat until meat reaches desired doneness, 4 to 6 minutes on each side. Let steak stand 5 minutes. Cut diagonally across the grain into thin slices.
