* Exported from MasterCook * MEAT LOAF TERIYAKI Recipe By : Camel Country Cookin' (Maria Moulder, Atlanta, GA) Serving Size : 8 Preparation Time :0:00 Categories : Main Course--Beef Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds lean ground beef 2 eggs -- lightly beaten 1/2 cup bread crumbs 1/2 cup green bell pepper -- chopped 1 large onion -- chopped 2 carrots -- grated 2 cloves garlic -- crushed 2 tablespoons soy sauce 2 tablespoons brown sugar 2 tablespoons lemon juice 2 tablespoons fresh parsley -- chopped 3/4 teaspoon ground ginger 1/2 cup brown sugar 1/2 cup soy sauce Combine all but last 2 ingredients. Form into 1 or 2 loaves and place in a 9 X 9" baking dish. Bake at 350F degrees for 30 minutes. Remove from oven and drain off grease. Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter. Pour sauce over sliced meat loaf or serve separately. - - - - - - - - - - - - - - - - - - NOTES : Really good! A nice change of pace from a regular meat loaf. Goes well with fried rice.
