MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spinach Feta Quiche Categories: Dinner, Pies Yield: 6 Servings 6 c Fresh spinach leaves; packed 1 Unbaked pie shell (10") 1/4 ts Basil 1 c Feta cheese; grated or - crumbled 1 1/2 c Cheddar cheese; grated 1 tb Unbleached white flour 4 Eggs 1 1/2 c Light cream 1 ds Paprika Preheat oven to 400 F. Steam spinach, press excess water out, and chop. Spread spinach on pie shell and sprinkle basil over it. Mix together feta and cheddar cheeses in medium-sized bowl. Toss flour into cheeses and spread over spinach in pie shell. Beat eggs well, add cream, and pour over cheese. Sprinkle with a dash of paprika. Bake 15 minutes.
