* Exported from MasterCook * Zucchini Quiche With Tomato Topping Recipe By : One Million Recipes CD Serving Size : 1 Preparation Time :0:00 Categories : Dinner Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Pastry -- for 1 lg or 2 sm pies 3 1/2 c Zucchini -- sliced 1/4" thick 1/2 c Onion -- chopped 1 c Milk 1 ts Salt 1/2 ts Oregano 1/8 ts Pepper 2 c Water 2 c Mozzarella cheese -- shredded Topping: 1 lg Tomatoes -- cut into 1/4" - lengthwise slices 4 sm Crackers -- crushed 1/4 ts Oregano 1/4 c Cheese -- shredded Bring zucchini, onion, salt, and water in saucepan to a boil. Reduce heat and simmer, uncovered for 8 minutes or until tender. Drain in a colander. In a large bowl combine milk, salt, pepper, oregano, and eggs and beat with wire whip until smooth. Add zucchini mix and cheese. Stir gently to mix and pour into unbaked pie shell. Bake in preheated 425 F oven for 15 minutes. Reduce heat to 350 F and bake 25 minutes. Topping: Mix crackers with shredded cheese and oregano. After quiche is baked, place tomato slices on top in a circle. Sprinkle on cracker mix. Return to oven until cheese melts.
