MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: French Onion Cottage Pie Categories: Beef, Vegetables, Potatoes, Cheese, Booze Yield: 4 Servings 2 lg Onions; halved, thin sliced 1 tb Oil 1 lb Ground beef 2 tb A-P flour 1/2 ts Salt 14 1/2 oz Can beef broth 2 tb Brandy -OR- Additional beef broth 1 tb Worcestershire sauce 1 tb Stone-ground mustard 3 c Mashed potatoes 1 c Ementhal (Swiss) cheese; - shredded Set oven @ 375 F/190 C. In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; cook for 35 to 40 minutes or until the onions are a deep golden brown, stirring occasionally. Meanwhile, in a large saucepan, cook beef over medium heat until no longer pink; crumble beef; drain. Stir in flour and salt until well blended; cook 1 minute longer. Combine the broth, brandy, Worcestershire sauce, and mustard. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in onions; heat through. Transfer beef mixture to a greased 8" square baking dish. Spread with potatoes; sprinkle with cheese. Bake, uncovered, for 30 to 35 minutes or until bubbly and cheese is melted. If desired, increase heat to 475 F/246 C and bake an additional 8 to 10 minutes until top is golden brown.
