MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Garden Chicken Cacciatore Categories: Crockpot, Poultry, Vegetables Yield: 12 Servings 12 Chicken thighs (3 lb); - boned, skinned 2 md Bell peppers; - cored, chopped 14 1/2 oz Can diced tomatoes with - basil, oregano & garlic; - undrained 6 oz Can tomato paste 1 md Onion; chopped 1/2 c Chicken broth 1/4 c Dry red wine or - additional chicken broth 3 cl Garlic; minced 3/4 ts Salt 1/8 ts Pepper 2 tb Corn starch 2 tb Water; cold Fresh parsley; - minced (optional) Place chicken in a 4 or 5 qt slow cooker. In a medium bowl, combine green peppers, tomatoes, tomato paste, onion, broth, wine, garlic, salt, and pepper; pour over chicken. Cook, covered, on low for 8 to 10 hours or until chicken is tender. In a small bowl, mix corn starch and water until smooth; gradually stir into slow cooker. Cook, covered, on high for 30 minutes longer or until sauce is thickened.
