MMMMM---- Recipe via Meal-Master (tm) v8.06 Title: Driving Miss Daisy's Beef & Cabbage Casserole Categories: Beef, Vegetables, Potatoes, Soups,, Dairy Yield: 4 Servings 1/4 lb Butter 1 md Bell pepper; cored, chopped 1 md Onion; chopped 1 1/2 lb Grond chuck (80% lean) beef 3 c Cabbage; chopped 3 1/2 c Potatoes (3 md); peeled, - sliced Salt & pepper 10 3/4 oz Can Cheddar Cheese soup; - undiluted 10 3/4 oz Can Cream of Mushroom soup; - undiluted 1/3 c Whole milk Lightly saute chopped bell pepper and medium onion in butter (or you can use 1 tb of olive oil). Set aside. Brown ground chuck. Drain fat. Put chopped cabbage in the bottom of a 9x13" pan. Thin slice the potatoes over the layer of cabbage. Add salt & pepper to taste. Add the soups along with 1/3 cup of milk to ground beef along with the sauteed bell pepper and onions. Stir well. Pour mixture over potatoes. Cover with tin foil and bake @ 350 F/175 C for 45 to 50 minutes. Remove the tin foil and bake uncovered for 10 more minutes.
