MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Salsa Verde Chicken Casserole Categories: Poultry, Salsa, Vegetables, Cheese Yield: 6 servings 2 c Shredded rotisserie chicken 1 c Sour cream 1 1/2 c Salsa verde; divided 8 Corn tortillas (6") 2 c Tomatoes; chopped 1/4 c Fresh cilantro; minced 2 c Monterey Jack cheese; - shredded MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Additional salsa verde Avocado slices Green onions; thin sliced Fresh cilantro leaves In a small bowl, combine the chicken, sour cream and 3/4 cup salsa. Spread 1/4 cup salsa on the bottom of a greased 8" square baking dish. Layer with half the tortillas and chicken mixture; sprinkle with half the tomatoes, the minced cilantro and half the cheese. Repeat layers with the remaining tortillas, chicken mixture, tomatoes and cheese. Bake, uncovered, @ 400 F/205 C until bubbly, 20-25 minutes. Serve with remaining salsa and toppings of your choice.
