MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Ranch Potato Casserole Categories: Potatoes, Dairy, Pork, Cheese, Herbs Yield: 8 servings 2 1/2 lb Medium red potatoes; - unpeeled, quarterered 1/2 c Sour cream 1/2 c Prepared ranch-style - dressing 1/4 c Bacon bits or crumbled - cooked bacon 2 tb Fresh parsley; minced 1 c Cheddar cheese; shredded MMMMM--------------------------TOPPING------------------------------- 1/2 c Cheddar cheese; shredded 2 c Cornflakes; coarse crushed 1/4 c Butter; melted Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-20 minutes. Drain. Combine the sour cream, dressing, bacon, parsley and 1 cup cheese. Place potatoes in a greased 13x9" baking dish. Pour sour cream mixture over potatoes and gently toss. Top with 1/2 cup of cheese. Combine cornflakes and butter; sprinkle over top. Bake @ 360 F/182 C for 40-45 minutes.
