MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Bruschetta Topped Chicken & Spaghetti Categories: Cheese, Pasta, Poultry Yield: 4 Servings 8 oz Uncooked whole wheat - spaghetti 4 Chicken breast halves - (5 oz ea); boned, skinned 1/2 ts Pepper 1 tb Olive oil 1 c Prepared bruschetta topping 1/3 c Shredded Italian cheese - blend 2 tb Parmesan cheese; grated Heat broiler. Cook spaghetti according to package directions; drain. Pound chicken breasts with a meat mallet to 1/2" thickness. Sprinkle with pepper. In a large nonstick skillet, heat oil over medium heat; cook chicken until no longer pink, 5 to 6 minutes on each side. Transfer to an 8" square baking pan. Spoon bruschetta topping over chicken; sprinkle with cheeses. Broil 3 to 4" from heat until cheese is golden brown, 5 to 6 minutes. Serve with spaghetti.
