* Exported from MasterCook * Deem's Chicken Casserole Recipe By : Deem Smith 350@F Preheat Serving Size : 5 Preparation Time :0:40 Categories : Casseroles Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Butter flavored spray 1 lb Chicken -- boiled or smoked, - leftover, thaw and reserve - with stock 1 pkg ORIGINAL Uncle Ben's long grain and wild rice - mix, NOT quick and NOT Brown and wild rice 1/2 c Dry sherry Chicken stock 1 c Sour cream 1 can Water chestnuts, chopped (optional) 1 c Mushrooms -OR- 1 can Mushroom stems and pieces (6 oz) Cheddar, shredded (optional) Cook rice mix per package instructions, subbing 1/2 c Sherry for 1/2 c of the liquid, and chicken stock for the rest. Add chicken and stir to cool rice a bit. Add sour cream, mushrooms, and water chestnuts. Stir. Spray casserole and transfer mix. Top with cheese.
