* Exported from MasterCook * Sweet Potato Casserole Recipe By : Glenda Denham Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c Sweet potatoes -- mashed 1/2 c Brown sugar 1/4 c Milk 2 Eggs 1/4 ts Salt 1 ts Vanilla 1/4 c Margarine Topping: 1/2 c Pecans -- chopped 1/2 c Brown sugar 1/4 c Flour 1/4 c Margarine -- melted Mix all ingredients (except topping ingredients) together and pour into a buttered 9x9" dish. Mix pecans, brown sugar and flour. Sprinkle mixture over top of potato mixture. Pour melted margarine over the top of the the sugar mixture. Bake 30 minutes at 350 F. - - - - - - - - - - - - - - - - - - NOTES: Freezing instructions: Before baking, separate into desired portions (this is REALLY rich and goes a long way). Freeze. To serve, thaw and heat as directed.
