MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cheesy Fiesta Beef Casserole Categories: Beef, Cheese, Chilies, Vegetables, Beans Yield: 8 servings 1 lb Ground beef 1 md Onion; chopped 15 oz Can black beans; rinsed, - drained 1 c Picante sauce 1/2 ts Chilli spice mix 10 1/2 oz Cream of chicken soup; - undiluted 10 oz Ro*Tel diced tomatoes - w/green chilies; undrained 4 oz Chopped green chilies 9 3/4 oz Bag nacho-flavored tortilla - chips; crushed 1 c Sharp cheddar cheese; - shredded 1 c Monterey Jack cheese; - shredded Avocado; diced (optional) Sour cream (optional) In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in beans, picante sauce and chili powder. In a bowl, combine soup, tomatoes and green chilies. In a lightly greased 2 1/2 qt baking dish, layer half the chips, beef mixture, soup mixture and cheeses. Repeat layers. Microwave on medium-high, uncovered, until heated through and cheese is melted, about 12 minutes. If desired, top with avocado and sour cream.
