MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Fajita Casserole Categories: Poultry, Vegetables, Rice, Herbs, Dairy Yield: 6 Servings 1 tb Olive oil 1 md Bell pepper; chopped 1 md Red bell pepper; chopped 1/2 md Onion; chopped 1 1/2 c Uncooked instant rice 10 oz Can Ro*Tel diced tomatoes - with green chilies 1 1/2 c Chicken broth 3 tb Fajita seasoning mix 2 c Chicken; cooked, diced 1 c Sour cream 2 c Shredded Mexican cheese - blend; divided Guacamole (optional) Tortilla chips (optional) Set oven @ 375 F/190 C. In a large oven-safe skillet, heat oil over medium heat. Add peppers and onion; cook until tender, 4 to 5 minutes. Stir in rice, diced tomatoes, broth, and fajita seasoning. Simmer on low until rice is tender, 5 to 7 minutes. Stir in chicken, sour cream and 1 cup of cheese. Cover; bake for 15 minutes. Uncover; sprinkle with remaining 1 cup cheese. Bake until cheese is bubbly and golden brown, 10 to 12 minutes. Serve with guacamole and tortilla chips, if desired.
