* Exported from MasterCook * Jim's Enchilada Casserole Recipe By : Jim & Jeanette Gaston Serving Size : 10 Preparation Time :0:00 Categories : Beef Casseroles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 lb Ground beef or turkey 2 tb Oil -- up to 3 tb 29 oz Diced tomatoes (2 cans) 15 oz Can tomato sauce 2 tb Chili powder 2 ts Cumin 7 oz Can Ortega diced chiles 15 1/4 oz Can kidney beans -- with liquid 1 lg Onion -- chopped 6 oz Can black olives Garlic -- to taste Salt and black pepper 2 ts Cilantro -- or to taste 2 c Cheddar or Monterey Jack -- - shredded, or to taste 20 Corn tortillas -- approximate Sour cream & salsa In a large skillet brown meat, onions, and garlic in oil. Drain fat. Add tomato sauce, tomatoes, chile powder, cumin, chilies, and kidney beans. Bring to a boil, cover and simmer for 20 minutes. Season to taste with salt and pepper. Add olives and cilantro. Line 9x13x2" baking pan with 1/3rd of the tortillas. Top with 1/3rd of the meat sauce and 1/3rd of the cheese. Repeat with the remaining ingredients, making two more layers but reserving 1/3rd of the cheese. Bake uncovered, in a 350 F oven for 30 minutes. Sprinkle the remaining cheese on top of the casserole. Let casserole rest for 15 minutes before serving. Serve with salsa and sour cream. Yield: 10 Servings - - - - - - - - - - - - - - - - - - -
