MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Potato Stuffing Casserole Categories: Potatoes, Dairy, Breads, Herbs, Vegetables Yield: 8 Servings 1/4 c Celery; chopped 1 Onion; chopped 4 tb Butter; divided 3 sl Bread; in cubes 5 lg Potatoes; peeled, cooked, - mashed 1/4 c Fresh parsley; chopped 1/2 ts Salt 1/4 ts Pepper 1 c Whole milk; hot 1 lg Egg; beaten Additional parsley In a medium skillet, saute celery and onion in 2 tb of butter until tender. Add bread cubes and stir until lightly browned. Stir in potatoes, parsley, salt, pepper, milk, and egg; mix well. Spoon into a greased 1-1/2 qt baking dish. Dot with remaining butter. Bake @ 350 F/175 C, uncovered, for 30 to 40 minutes or until lightly browned. Garnish with additional parsley.
