Reduce heat and simmer for 5 minutes. Brown ground beef until cooked and drain. Saute onion and green pepper until tender. Drain eggplant and place in large casserole dish. Add ground beef, onion, green pepper, tomatoes, oregano, salt, and pepper. Bake in microwave for 10 minutes on 80% power, 30 to 45 minutes in conventional oven.
