      Title: Baked Blueberry Pancake
 Categories: Breads, Fruits, Dairy
      Yield: 6 servings
 
      2 c  Pancake mix
  1 1/2 c  Milk
      1 lg Egg
      1 tb Canola oil
      1 ts Ground cinnamon
      1 c  Blueberries
           Butter & syrup or jam/jelly
 
  In a large bowl, combine the pancake mix, milk, egg, oil
  and cinnamon just until blended (batter will be lumpy).
  Fold in blueberries.
  
  Spread into a greased 15x10x1" baking pan.
  
  Bake @ 400 F/205 C for 10-12 minutes or until golden
  brown. Serve with butter and syrup or jam/jelly.
