MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Fiesta Scrambled Eggs
 Categories: Vegetables, Chilies, Pork, Cheese, Salsa
      Yield: 6 Servings

      1 tb Oil
    1/2 c  Onion; chopped
    1/4 c  Red bell pepper; chopped
      1    Jalapeno pepper; seeded and
           - chopped
      8 sl Bacon; cooked, crumbled
      8 lg Eggs; lightly beaten
      1 c  Cheddar cheese; shredded,
           - divided
    1/2 ts Salt
    1/8 ts Pepper
           Salsa

  In a large cast-iron or other heavy skillet, heat oil over
  medium-high heat. Add onion and peppers; cook and stir until
  tender, 3 to 5 minutes. Sprinkle with bacon. Pour eggs over the
  top; sprinkle with 1/2 cup cheese, salt, and pepper. Cook over
  medium heat, stirring occasionally, until eggs are completely set.
  Sprinkle with remaining 1/2 cup cheese. Serve with salsa.
