MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Berry Crepes With Coconut-Pistachio Crunch Categories: Breads, Nuts, Herbs, Fruits Yield: 6 Servings MMMMM--------------------------TOPPING------------------------------- 1 c Sweetened shredded coconut 1 c Salted pistachios; chopped 1/4 c Unsalted butter; melted 1 tb Brown sugar; packed 2 tb Crystallized ginger; chopped MMMMM--------------------------FILLING------------------------------- 8 oz Tub mascarpone cheese; - room temperature 1 sm Lemon; zested, juiced 2 tb Brown sugar 1 1/2 ts Ground cinnamon 2 c Fresh strawberries; sliced 1 1/2 c Fresh blackberries; halved 12 Prepared crepes (9") 1/4 c Caramel sauce Set oven @ 350 F/175 C. In a large bowl, combine topping ingredients. Spread evenly in a greased 15x10x1" baking pan. Bake until coconut is light brown, 10 to 12 minutes, stirring halfway. Cool completely on a wire rack. In a large bowl, whisk mascarpone, lemon zest, lemon juice, brown sugar, and cinnamon. Fold in strawberries and blackberries. Spread each crepe with 1/4 cup filling. Fold each crepe into quarters.
