MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Soul Cakes (Classic Halloween) Categories: British, Cookies, Halloween, Samhain Yield: 48 Cookies MMMMM---------------------------CAKES-------------------------------- 1 kg Flour (8-1/3 c) 1 1/2 tb Spices (approximate); - see Example Spice Mix 2 ts Salt 500 ml Milk (2 c +2 tb) 2 c Butter 2 c Sugar 8 Egg yolks 2 c Dried fruit (raisin, - currant, cherry, - cranberry); - chopped MMMMM---------------------EXAMPLE SPICE MIX-------------------------- 2 ts Cinnamon; up to 3 ts 1 ts Nutmeg 1 ts Ginger 1/2 ts Cloves 1/2 ts Allspice MMMMM------------------------TO DECORATE----------------------------- Powdered sugar Tools: * Measuring cups * Rolling pin * Parchment paper * Baking sheet * Cookie cutter (2") Heat oven to 400 F (205 C). If using a larger fruit, chop it smaller. Stir the flour, spices, salt, and dried fruit together. Warm the milk to be lukewarm. Cream the butter and sugar together, then mix in the egg yolks. Add some salt and pepper to the egg whites, cook them in a microwave, and enjoy. Mix the flour mixture into the creamed sugar. Gradually add the milk to the dough until it goes from crumbly to a smooth dough. Knead the dough a little on a floured surface, and then roll it out to 1/2". Cut into 2" circles, place on parchment paper, and cut a shallow "+" shape across the entire top of each cookie. Bake for 15 minutes, then dust the tops with powdered sugar. Recipe by Kye E.
