MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Halloween Haunted Hash Browns Categories: Potatoes, Greens, Vegetables, Dairy, Cheese Yield: 12 Servings 4 md Potatoes; grated 1/2 lg Onion; fine chopped 1 lg Egg 2 tb A-P flour Salt & pepper Oil; for frying Black olives; for the eyes Ketchup or salsa; as a dip Grate potatoes using the large holes of a box grater. Place in a clean kitchen towel and squeeze out as much moisture as possible. In a large bowl, mix grated potatoes, onion, egg, flour, salt, and pepper until combined. Add more flour if too wet or another egg if too dry. Shape about 1/4 cup of mixture into ghost shapes with slightly wet hands. Heat 1/4" of oil in a skillet over medium-high heat. Fry ghost shapes for 3 to 4 minutes per side until golden and crispy. Drain on paper towels. While still warm, press in small pieces of black olives for eyes. UDD Note: Place pimento pieces for the iris of the eye to really make it "spooky". Serve immediately with ketchup or salsa for dipping.
