Peel carrots. Using a vegetable peeler, slice the zucchini and squash into long strips and shred the carrots except for the center core(s). Set aside until ready to cook. Heat the butter or oil over medium heat in a heavy skillet or Wok. Add the shreds, carrots first, cooking for 2 or 3 minutes. Add zucchini and squash and toss frequently, cooking for 3-4 minutes.
