      Title: Sweet Potato And Pineapple Souffle
 Categories: Casseroles
      Yield: 1 Casserole
 
      3 c  Sweet potatoes; mashed; hot
      3 tb Butter
    1/2 ts Salt
    1/2 ts Lemon zest; grated
      2    Eggs; separated
    3/4 c  Crushed pineapple
 
  While sweet potatoes are still hot, beat in butter, salt, beaten egg
  yolks, and lemon zest. Beat until light and fluffy. Fold in
  pineapple, which has been well drained. Cool mixture, then add
  stiffly beaten egg whites. Bake in well-greased baking dish at 350 F
  for 40 minutes. Serve hot.
