      Title: Mom's Sweet Potato Bake

      Yield: 8 servings
 
      3 c  Cold mashed sweet potatoes
           - (prepared without milk or
           - butter)
      1 c  Sugar
      3 lg Eggs
    1/2 c  Milk
    1/4 c  Butter; softened
      1 ts Salt
      1 ts Vanilla extract

    1/2 c  Brown sugar; packed
    1/2 c  Pecans; chopped
    1/4 c  A-P flour
      2 tb Butter; cold
 
  Set oven @ 325 /163 C.
  
  In a large bowl, beat the sweet potatoes, sugar, eggs,
  milk, butter, salt and vanilla until smooth. Transfer
  to a greased 2 qt baking dish.
  
  In a small bowl, combine the brown sugar, pecans and
  flour; cut in butter until crumbly. Sprinkle over sweet
  potato mixture. Bake, uncovered, until a thermometer reads
  160 F/70 C, 45-50 minutes.
