Bring 1 - 1/2 cups water to a boil; add the squash and simmer over medium heat, covered for 3 - 5 minutes or until just tender; drain. Add the butter, season to taste, and toss to coat. Serve hot. Summer Squash and Tomatoes: Two minutes before the squash is done, add 2 tomatoes, peeled, seeded, and chopped with some of the liquid gently squeezed out. Summer Squash with Horseradish Cream: Mix 1/2 cup sour cream with 1 tb prepared horseradish, add to the cooked squash, and reheat for a few minutes for serving.
