* Exported from MasterCook * Mushroom-Stuffed Yellow Squash Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 medium-size yellow squash 1/4 C. butter or margarine 1/2 Lb. fresh mushrooms -- chopped 1 Small onion -- chopped 1 Clove garlic -- minced 1 C. soft bread crumbs 1/2 Tsp. salt 1/4 Tsp. pepper Wash squash thoroughly; cook in boiling water to cover 8 to 10 minutes or until tender, but still firm. Drain and cool slightly. Remove and discard stems. Cut each squash in half lengthwise; remove and reserve pulp, leaving a firm shell. Chop pulp and set aside. Melt butter in a skillet; add mush- rooms, onion and garlic, saute until tender. Remove from heat and stir in squash pulp, bread crumbs, salt and pepper. Place squash shells in a 13 x 9 x 2-inch baking dish. Spoon squash mixture into shells. Bake at 350 degrees for 15 minutes. Yield 4 servings. - - - - - - - - - - - - - - - - - -
