* Exported from MasterCook * Acorn Squash Rings Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 md Acorn squash 1/2 c Unsweetened orange juice 1/4 c Brown sugar -- firmly packed 2 tb Light corn syrup 2 tb Oleo 1 ts Lemon zest -- grated Cut each squash crosswise into six (1/4" thick) slices. Discard seeds & membrane. Arrange slices in a 13x9x2" baking dish coated with cooking spray. Pour orange juice over squash & bake at 350 F for 30 minutes. Combine brown sugar, corn syrup, oleo & lemon rind in a small non-aluminum saucepan. Bring to a boil; reduce heat & simmer 2 to 3 minutes, stirring constantly.
