* Exported from MasterCook * Skewered Vegetables With Cilantro Sauce Recipe By : Cooking Live Show #8887 Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cilantro Sauce: 1 c Cilantro leaves -- packed 1/2 c Parsley leaves -- packed 1/3 c Scallions -- coarsely chopped 1 cl Garlic 2 ts Lime juice 1/2 c Plain yogurt 1/2 c Sour cream Salt Black pepper -- freshly ground Grilled Vegetables: 4 tb Olive oil 1 cl Garlic -- finely minced 1 tb Ginger -- freshly grated Cherry tomatoes Zucchini -- diced 1/2" Red onion -- quartered, - separated into - 3-layer pieces Red and green bell peppers -- - seeded, diced 1" Corn on the cob -- cut into - 1/2" rounds Baby pattypan squash (optional) Salt Black pepper -- freshly ground Soak 8 wooden skewers in water for 1 hour. In a food processor combine the cilantro, parsley, scallions, garlic, and lime juice and puree until finely chopped. Add the yogurt and sour cream and continue pureeing until smooth. Season to taste with salt and pepper. Preheat charcoal grill or grill pan. In a small bowl stir together the olive oil, garlic and ginger. Arrange the vegetables on the 12 skewers and baste with the olive oil mixture. Season with salt and pepper. Grill the vegetables, basting occasionally, until browned and tender, about 8 to 10 minutes. Serve with the cilantro sauce. Yield: 8 Servings - - - - - - - - - - - - - - - - - -
