* Exported from MasterCook * Spicy Collard Greens Recipe By : Light & Easy Diabetes Cuisine by Betty Marks Serving Size : 4 Preparation Time :0:00 Categories : Diabetic Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Collard greens 2 c Vegetable stock 3 Fresh Basil leaves; up to 4 -OR- 1/2 ts Dried basil 2 ts Virgin olive oil 3/4 c Onion -- chopped 1 tb Ginger root -- grated 1 t Jalapeno pepper -- chopped 1/4 ts Sesame oil Pepper to taste 1 t Sesame seeds Rinse greens well in tepid water and slice in thin strips. Place in a saucepan with the stock and basil, cover, and cook about 30 minutes, until greens are tender.
