* Exported from MasterCook * Vegetable Curry Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 c Rice 1 c Onions -- diced 1 c Carrots -- diced 1 c Celery -- diced 1 c Peas -- fresh or canned 4 tb Butter or other fat 1/2 ts Salt 1/4 ts Curry powder 2 ts Worcestershire sauce Wash the rice and cook in 2 qt of boiling salted water. Drain in a colander, pour cold water through, and let stand over steam until the grains swell and become separated. Cook the vegetables in a small quantity of water and just before removing from the stove add the canned peas, or if fresh peas are available, cook them with the other vegetables and add the fat, salt, curry, and sauce. On a hot platter make a ring of the cooked rice, pile the vegetables in the center, pour over them the liquid mixture, and serve very hot.
