* Exported from MasterCook * Curried Vegetables Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lg Yellow onion -- chopped 2 cl Garlic -- crushed 1 c Water 2 Carrot -- scrubbed & sliced 1 lg Green pepper 1 Celery rib -- sliced 1 tb Curry powder 1 ts Coriander -- ground 1 ts Turmeric 1 ts Ground cumin 1/4 ts Dry mustard 1/4 ts Crushed red pepper flakes 2 lg Potato -- peeled & chunked 3 c Water 2 c Cauliflower flowerets 8 Fresh mushrooms -- cleaned 1/2 c Frozen peas Preparation time: 1 hour 10 minutes Delicious served over brown rice or baked potatoes, or rolled up in a whole wheat tortilla. Saute the onion and garlic in the 1 cup water until translucent. Add the carrots, green pepper, and celery. Add the seasonings and cook and stir about 10 minutes, adding more water if necessary to keep from sticking. Add the potatoes and the 3 cups water. Cover and cook for 15 minutes.
