      Title: Cilantro Potatoes
 Categories: Five, Potatoes, Herbs, Vegetables
      Yield: 8 servings
 
      1 bn Fresh cilantro; chopped
      1 cl Garlic; minced
    1/4 c  Olive oil
      3 lb Potatoes; peeled, diced
    1/2 ts Salt
 
  In a large cast-iron or other heavy skillet, cook
  cilantro and garlic in oil over medium heat for 1
  minute. Add the potatoes; cook and stir until tender and
  lightly browned, 20-25 minutes. Drain. Sprinkle with
  salt.
