                            Cajun French Fries

  15      lb            Potatoes
     1/2  c             Olive oil
     1/2  c             Cajun seasoning -- up to 3/4 c

Peel and cut potatoes into french fry cuts. Toss with olive oil and
cajun seasoning. Put on cookie sheets and bake at 350 F for
15 minutes. Remove from oven and cool. Place in freezer bags.
Freeze.

To Cook:

Remove from freezer bag and place on cookie sheet. Place in 350 F for
30 minutes or until golden.
