* Exported from MasterCook II * Basil Mashed Potatoes Recipe By : Chef Du Jour Dean Fearing Show #DJ9068 Serving Size : Preparation Time : Categories : Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 lb Baking potatoes -- peeled, cubed 3/4 c Heavy cream 1/4 c Unsalted butter 2 tb Lemon juice 1/2 c Basil leaves -- chopped 1 tb Ginger -- grated 1 tb Garlic -- minced Salt In a large saucepan of salted water bring potatoes to a boil. Simmer about 20 minutes or until tender. Drain. Pass potatoes through a ricer into a mixing bowl. Meanwhile, in a small saucepan combine cream and butter. Bring to a boil and keep hot until potatoes are cooked. With a mixer or electric beater whip potatoes on slow speed, slowly drizzling in cream mixture. Do not overmix.
