* Exported from MasterCook * Saute Of Wild Mushrooms With Parsley Recipe By : Bon Appetit, May 1994 Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lb Mixed fresh wild mushrooms - such as porcini, crimini, - chanterells, morels, and - oyster 1/4 c Unsalted butter 4 cl Garlic -- minced 2 tb Fresh parsley -- chopped Thickly slice porcini, if using. Cut any large mushrooms into quarters; smaller ones may be left whole. Melt butter in heavy large skillet over medium-high heat. Add mushrooms, minced garlic and 1 tb chopped parsley. Season to taste with salt and pepper. Saute until liquid given off by mushrooms evaporates, about 10 minutes. Divide sauteed mushrooms among plates.
