* Exported from MasterCook II * Glazed Cumin Carrots Recipe By : Bonnie Stern, Simply HeartSmart Cooking Serving Size : 4 Preparation Time :0:25 Categories : Cornellier Classics Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 lb Carrots -- sliced 1/4" thick 2 ts Vegetable oil 1 cl Garlic -- minced 1 tb Ginger root -- chopped fine 1 1/2 ts Cumin 1 tb Honey 1 1/2 c Chicken broth or water Heat oil in deep skillet and add garlic and ginger. Cook gently for 1 minute. Add cumin and cook for 30 seconds. Add carrots, honey, salt, and stock. Cook over medium heat, uncovered, until all liquid evaporates and carrots are tender. If liquid evaporates before carrots are tender, simply add water. Taste and adjust seasonings if necessary. - - - - - - - - - - - - - - - - - -
