MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Spinach Squash Boats Categories: Pork, Zucchini Yield: 4 Servings 2 md Zucchini 1 c Spinach; chopped; cooked 1 c Ham; diced -OR- 4 sl Bacon 1 tb Onion; minced 2 tb Flour 1/2 c Milk 1/2 c Mozzarella; shredded Salt & pepper Halve zucchini lengthwise and simmer in boiling salted water until barely tender. Scoop out pulp; dice and add to chopped spinach. Cook bacon & saute onion in bacon grease. If leftover chopped ham is used, saute it with onion in small amount of margarine.
