MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Old-Fashioned Stuffed Bell Peppers Categories: Vegetables, Beef, Rice, Sauces Yield: 6 Servings 6 lg Bell peppers 1 1/2 lb Ground beef 3/4 c Onion; chopped 45 oz Tomato sauce (3 cans); - divided 3 c Cooked rice 1/2 ts Salt 1/2 ts Garlic powder 1/4 ts Pepper MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Cheddar cheese; shredded Fresh parsley; chopped Sour cream Set oven @ 350 F/175 C. Cut and discard tops from peppers; remove seeds. In a Dutch oven, cook peppers in boiling water until crisp-tender, 3 to 4 minutes; drain and rinse in cold water. In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 8 to 10 minutes, breaking up beef into crumbles; drain. Remove from the heat. Stir in 3 cups tomato sauce, rice, salt, garlic powder, and pepper. Spoon into peppers. Place in an ungreased shallow 3 qt baking dish. Drizzle with remaining tomato sauce. Bake, covered, until peppers are tender, 25 to 30 minutes. Serve with toppings as desired.
