      Title: Zucchini Yogurt Salad
 Categories: Salads, Zucchini
      Yield: 4 Servings
 
      1 c  Plain yogurt
      2 tb Olive oil
      4 tb Fresh mint; snipped
      4 ts Lemon juice
      2 c  Zucchini;
           - thinly sliced & peeled
           Lettuce leaves
 
  Stir together first 4 ingredients. Add zucchini; combine thoroughly.
  Chill. Serve on lettuce leaves.
