      Title: Zucchini Salad Russe
 Categories: Russian, Salads, Zucchini
      Yield: 8 Servings
 
      2 c  Zucchini; drained & diced
      1 c  Turnip; cooked, diced
      1 c  Potato; cooked, diced
      1 c  Beets; cooked, diced
      1 c  Peas; cooked
           French dressing
           Mayonnaise
           Leaf lettuce or spinach
           Eggs; hard-boiled;
           - for garnish
           Tomato wedges; for garnish
 
  Combine all vegetables and marinate in French dressing for several
  hours. Before serving, add enough mayonnaise to bind mixture
  together. Layer a serving platter with crisp lettuce or spinach
  leaves. Mound salad in center and garnish with hard boiled eggs and
  tomato wedges.
