MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Kale Salad With Apples & Cheddar Categories: Greens, Fruits, Cheese, Citrus, Nuts Yield: 4 Servings 4 c Curly kale or Russian kale; - stemmed & washed in - 2 rinses of water, - very finely chopped or - slivered 2 tb Almonds; - toasted; coarsely chopped 1 Sweet apple; - cored, diced 1/4" 1 oz Sharp Cheddar cheese; - diced 1/4" 2 tb Fresh lemon juice Salt 1 cl Garlic; very small, pureed 5 tb Extra virgin olive oil 2 tb Parmesan; fresh grated Combine the kale, almonds, apple, and Cheddar in a large bowl. Whisk together the lemon juice, salt, garlic, and olive oil. Add to the salad, and toss well. Sprinkle the Parmesan over the top, and serve. Advance Preparation: This salad benefits from tossing with the dressing about 15 minutes before you serve it. The kale will soften in the dressing.
