MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Shrimp Avocado Salad Categories: Seafood, Fruits, Vegetables, Chilies, Herbs Yield: 6 Servings 1 lb Peeled, deveined, cooked - shrimp; coarse chopped 2 Plum tomatoes; seeded, - chopped 2 Green onions; chopped 1/4 c Red onion; fine chopped 1 Jalapeno; seeded, minced 1 Serrano chile; seeded, - minced 2 tb Fresh cilantro; minced 2 tb Lime juice 2 tb Seasoned rice vinegar 2 tb Olive oil 1 ts Adobo seasoning 3 md Ripe avocados; peeled, - diced Bibb lettuce leaves Lime wedges Place first 7 ingredients in a large bowl. Mix lime juice, vinegar, oil, and adobo seasoning; stir into shrimp mixture. Refrigerate, covered, to allow flavors to blend, about 1 hour. To serve, gently stir in avocados.
