* Exported from MasterCook * Mandarin Almond Salad Recipe By : Taste of Home, Jun/Jul 1994 Serving Size : 5 Preparation Time :0:00 Categories : Salads Chinese Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tb Sugar -- divided 1/2 cup Slivered almonds 1/4 cup Vegetable oil 2 tb Vinegar 1 tb Fresh parsley -- minced 1/2 ts Salt 1/8 ts Pepper 1/8 ts Hot pepper sauce 1 bn Red leaf lettuce -- torn 11 oz Can mandarin oranges -- drain 1 sm Red onion -- sliced In a small skillet, melt 3 tb sugar over low heat. Add almonds, stir until coated. Cool; break into small pieces and set aside. In a jar with a tight fitting lid, combine oil, vinegar, parsley, salt, pepper, hot pepper sauce, and remaining sugar; shake well.
