* Exported from MasterCook * Queso Blanco Fresco and Vegetable Salad Recipe By : Cacique USA Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Salad: 12 oz Queso Blanco Fresco 3 Cucumbers -- peeled and sliced 1 Red onion -- thinly sliced 6 Roma tomatoes -- sliced Cilantro Vinaigrette: 1 c Lime juice 3 tb Lime zest 1 bn Cilantro leaves 1 cl Garlic 1 tb White wine vinegar 1 1/2 c Canola oil Salt and pepper -- to taste Slice the cheese in 1/4" slices. In a serving platter, alternate layers of sliced tomatoes, onions, and cucumber. Drizzle with the cilantro vinaigrette. Cilantro Vinaigrette: Put the lime juice, lime zest, cilantro, garlic, and white wine vinegar in a blender. When the cilantro has broken down into a fine puree, start adding the oil.
