* Exported from MasterCook II * Vegetable Rice Salad Recipe By : The Occasional Vegetarian by Karen Lee Serving Size : 6 Preparation Time :0:00 Categories : Salads Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c Water 1 c Basmati rice 1 c Frozen peas -- thawed 1 bn Watercress 1 c Cremini or button mushrooms -- - sliced 2 Green onions -- chopped, - white & green parts 1 Carrot -- unpeeled, - slice in thin rounds 6 tb Herbal vinaigrette Bring the water to a rolling boil. Wash and drain the rice; stir into the boiling water. Reduce heat to low and cook 15 minutes. While rice is hot, add peas, watercress, mushrooms, green onions, and carrot and toss for a couple of minutes. The heat of the rice will wilt the vegetables. Add the viniagrette and toss again.
