* Exported from MasterCook * Salmon Caesar Salad Recipe By : Better Homes and Gardens Annual Recipes, '95, p. 163 Serving Size : 3 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 10 oz. pkg. fresh Caesar salad mix -- (includes lettuce, dressing -- croutons and parmesan cheese) 1 small yellow, red and/or green bell pepper -- in julienne strips 1/4 cup sliced pitted ripe olives 6 ounces smoked salmon -- skinned/boned broken in chunks -- OR 3 ounces thinly sliced smoked salmed -- lox style, in bite- (3 to 4) -- OR -- 4 ounces grilled or canned salmon -- skinned/boned broken in chunks In a large salad bowl, combine the lettuce nad dressing from the salad mix, the sweet pepper strips and olives. Toss mixture gently to coat. Add the croutons and cheese from the mix and the salmon. Toss together before serving. Makes 3 main dish servings. Note: if you can't find packaged Caesar salad, substitute 5 cups torn mixed greens, 1/3 cup croutons, 3 Tbspsl bottled Caesar or ranch salad dressing, and 2 tablespoons of grated Parmesan cheese.
