Gekas Serving Size : 6 Preparation Time :0:00 Categories : Artichokes Crab Luncheon Salads - Main Dish Seafood Frosting/Filling Bobbie Not Sent Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 medium artichokes 1 cup crab meat 1/4 cup chopped ripe olives 3/4 cup olive oil 2 to 3 lemons salt and pepper Remove the tough outer leaves of artichokes. Cut off part of stems and about one inch from the tips. Cut artichokes in half lengthwise and scoop out the choke. Drop rest of artichokes in boiling salted water, seasoned with the juice of 1 lemon and 1 tablespoon olive oil. Simmer for 30 minutes or until tender. Drain well and put into a salad bowl. Add crab meat and chopped olives. Whip oil and lemon juice. Add salt and pepper to taste. Mix all ingredients well. Makes 4-6 servings.
